- 2 tablespoons olive oil
- 1/2 large onion, chopped
- 2 cloves garlic, minced
- 1 pound ground beef
- 1 pound italian sausage)
- 8 oz chorizo
- 1 can (20 oz) crushed tomatoes
- 1 can (10 oz) Fire roasted diced tomatoes
- 1 can (10 oz) Hot diced tomatoes with green chilies
- 1 can (8 oz) White chili beans
- 1 can (8 oz) Red chili beans
- 1 box carol shelbys chili seasoning mix
- 1 tablespoon smoked paprika
- 1 tablespoon lemon pepper
- 1 tablespoon Everything but elote seasoning
- Salt and pepper to taste
- 1 cup beef or vegetable broth
- Optional toppings: shredded cheese, sour cream, green onions, cilantro
Instructions
- In a large pot, heat olive oil over medium heat. Add ground beef and sausage. remove and drain excess fat if necessary.
- Add chopped onion and sauté until translucent, about 5 minutes.
- Add minced garlic and chorizo and cook for another minute until fragrant. Add beef and sausage back to pot
- Stir in crushed tomatoes, beans, chili mix and seasonings.
- Add broth and bring the mixture to a boil.
- Reduce heat and let it simmer uncovered for about 2 hours, stirring occasionally.
- Add stick of butter.
- Adjust seasoning if needed. Serve hot with your choice of toppings.
